Tried some recipes with Eggs and wandering about , we stop at Sweet Potatoes. I came across some wonderful and fresh Sweet potatoes recently and couldnt help looking around for some interesting ideas.
While doing so , I just bumped into some amazing facts about these humble roots…hmmm and I’d certainly try to use them more in my dishes henceforth.

3) They are high in Beta Carotene. They are an excellent source of copper, manganese, potassium, iron and vitamin B-6.
