Lately , I feel I have too much going on. August is an extremely happy month for me. Usually it kick starts with my dad’s birthday , followed on by my daughters and this time around , its extra special to have my sister and nephew visiting us too.
Amidst all the rush and excitement , cooking elaborate meals might just be a thing to do every second day. When you are completely down with all the energy and organizing things , sometimes all you need is a simple and wholesome ” quick ” meal to get back on track.
So , this one’s a favorite at home for a very simple and quick lunch fix.
1 ) 2 cups crushed / finely diced tomatoes
2 ) 1 Cup Chopped onions
3 ) 4 to 5 Garlic cloves
4 ) 1 Cup Chopped Mushrooms ( I’ve used the White Button Mushrooms )
5 ) Italian Herbs ( Oregano/ Thyme )
6 ) Parsley for seasoning
7 ) 2 Tablespoons Extra Virgin Olive Oil
8 ) Salt to taste
9 ) Ground Pepper for seasoning
Take a saucepan , and fry Onions and Garlic until Golden brown. Add the Tomatoes and mushroom and fry them for another minute or two.
Once cool , blitz them into a fine sauce or a chunky one based on your preference. Here the sauce is done very fine.
Add the Parsley , Herbs , salt and pepper.
Cook the Spaghetti with some salt.( Follow the instructions over the pack ) Pour the sauce over the Pasta and serve hot.
Best served with some Parmesan cheese grated or chopped Parsley on top of it.
