It’s been a week with a few baby steps towards being Paleo Compliant. This is the second time around that i’m trying the Paleo diet. The initial days sure drain you out. The overwhelming effect of planning , constant shopping doesn’t help unless you are organized.This time around , we made a Meal plan and a shopping plan for a week and so far we’ve been able to stick to the plan.
We had the sausage stir fry for dinner and it was a very easy one to dish out. Took me less than 30 minutes to make this dish including the prep.
The Sausage Stir fry is simple. The recipe is adapted from Paleo Plan.
We Indian’s like it spicy. With such a vast array of spices growing in India , we have to make the best use of it.
So , here’s how I adapted the recipe
- 1 ) 4 Chicken Sausages – cut into 1/2 inch pieces
- 2 ) 1 Medium sized onion diced
- 3 ) 1 Medium sized Tomato
- 4 ) 1 Teaspoon Extra Virgin Olive Oil.
- 5 ) 1 Cup of shredded spinach
- 6 ) Salt to taste*
Wash the sausages well and cut them into thin rounds of 1/2 inch. In a pan add about 1 Teaspoon Extra Virgin Olive Oil and fry the sausages until they are brown/ cooked well. Once this sauages are cooked , add the onions and fry them until the onions are pink. Add the tomatoes , spinach and salt* and cook for a minute or two.
*Note: It is ideal to check the salt in the sausages once they are cooked. If the salt is fine , do not add any more salt in the dish.
* Note: You can also vary the spice level of this stir fry by adding Paprika/ Peppers.
