Clearly , how often can you eat Hard boiled eggs , poached eggs , omelets or fried eggs. It was time for a variation. This dish was inspired from one of the Covers for 25 best breakfast ideas and it immediately struck a chord. Such an elegant and easy dish to make and so beautiful on the plate. It’s an easy dish to make and allows us to vary it with as many options as one would like. Dice the veggies of your choice and chuck in any beautiful ingredient you’d like to go with eggs. Break an egg on it and bake. No rocket science there at all.
Serving size : The husband and wife. The baby decided to go with a poached egg 😉
- 2 Bell Peppers – Yellow or Red
- 4 Eggs
- 1 Onion diced
- 1 Tomato diced
- 4 sausages of your choice ( Optional )*
- 1 Teaspoon EVOO
- Salt and Pepper ( Per your taste and liking )
- Wash the Bell Peppers and cut them into equal halves. Remove the seeds and set them aside.
- Wash the sausages and cut them into very thin rounds. Fry them in a pan with the oil along with the onions and tomatoes until they are cooked. ( Should take about 6 to 7 minutes ). You could add salt and pepper to this mixture.
- Make four equal portions and slowly scoop the mixture and place them in the Bell peppers.
- Crack an egg in each of the bell pepper halves and slowly place them on a Baking tray.
- Preheat the oven at 180 C/ 350 F and bake them for 30 to 35 minutes.
- Add some salt and pepper on top of the egg.
- The sausages are optional and can be replaced with any vegetable of your choice. ( Maybe zucchini , cauliflower , cabbage ….)
- The size of the sausages are very small in this case and when cut , measured into 1/2 a cup.
- The baking duration can be varied to alter the Egg texture. If you like the Egg to be slightly runny , you could try it for 15 to 20 minutes instead.
